Cooking Method (3kg Roast)
-
Preheat oven to 200ºC.
-
If you have time, tie the beef with individual pieces of string at 5cm intervals.
-
Brush the roast lightly with oil and sear on all sides over moderately-high heat until evenly browned.
-
Season with salt and pepper, then rub with fresh herbs. Tuck a few sage leaves under the string if using.
-
Place on a rack in a roasting dish and add about 1 cup of water to the dish.
-
Roast for:
-
Rare: ~120 minutes
-
Medium: ~150 minutes
-
Well Done: ~180 minutes
(For accuracy, use a meat thermometer rather than time alone.)
-
-
Remove the roast, cover loosely with foil, and rest for 20 minutes before carving.
-
Serve with roasted vegetables.
Tips
-
Internal Temperatures: Rare 55–60ºC | Medium 65–70ºC | Well Done 75ºC
-
Tongs Test: Rare = very soft | Medium Rare = soft | Medium = springy but soft | Medium Well = firm | Well Done = very firm
-
Tying rib eye/Scotch fillet helps it cook evenly and slice cleanly, and it’s also a chance to tuck in herbs like oregano, rosemary, or bay leaves under the string for extra flavour.
